CHINESE CULINARY ARTS

This course has been designed for students who have strong command  of the English language to a minimum level of XXXX and who want to study a professional cookery qualification.

The content is tailored for those who want to study or work within the hospitably sector, it includes several trips and visits, guest speakers and work experience with an international brand

Students studying the X week course will be based in the Lu Ban restaurant and live X miles from the Baltic Triangle part of Liverpool. As well as developing culinary skills you will learn about Western cuisine, alcoholic beverage service skills and achieve qualifications to give you a competitive  advantage to gain employment or extend studies in the UK.

Level 3 Diploma in Chinese Culinary Arts (Lu Ban)

Preparing and Making of Advanced Hot Chinese Dishes

In this unit, you will be introduced to a range of different advanced dishes and methods used in Chinese cooking. There is an emphasis on selecting quality produce and how to prepare advanced hot Chinese dishes, including the selection of the correct ingredients and using specific knife skills exemplified by characteristics of Tianjin cuisine. Alongside embedding an understanding of a large range of preparation, par-cooking and plating techniques.

Preparing and Decorating Cold Chinese Dishes

Learners will be introduced to a variety of cooking skills different types of mixing needed to decorate cold Chinese dishes professionally, how to prepare and decorate advanced cold Chinese dishes, including the selection of the correct ingredients and using specific knife skills

Advanced Chinese Noodle and Dumplings

Learners will be introduced to a range of different advanced dishes and methods used in Chinese cooking. This will include dumplings and Baozi, including the selection of the correct ingredients and using specific cutting, pulling, shaping and crimping

Understanding the Chinese Food Culture

The unit will further explore the regional customs of China

 Dough Modelling

Learners will be introduced to a range of different advanced techniques for producing dough models

Advanced Western influenced and Chinese desserts

How to prepare advanced Chinese desserts, including the selection of the correct ingredients and using specific filling, blending, finishing and decorating methods.

Food hygiene certificate

A qualification designed to introduce you to working hygienically in a professional, hotel, restaurant or bar

 

Level 1 working in the hospitality industry

Created exclusively for Lu Ban this qualification will help you with job seeking skills for working in the UK

 

Lu Ban certificate allergen awareness

A one-day course to enable you to identify ingredients that may cause an allergic reaction to guests dining in a restaurant, hotel, café, cruise ship or take away

 

Lu Ban certificate in serving alcoholic beverages (I can write)

Based within the Lu Ban restaurants own bar you will learn tips, hints and skills to serve alcoholic drinks, this include, glass selection, mixing, shaking and pouring along with UK law in the sales and service of drinks

 

Lu Ban certificate in guest etiquette (I can write)

It is very important to understand how guests expect to be treated when dining out or entering a restaurant, hotel or bar, this course will equip you with the skills to understand etiquette and service standard traditions

 

Lu Ban certificate in an introduction to western food preparation, cooking and serving (I can write)

This certificate is awarded for attendance at a series of masterclasses presented by UK chef, session will include practical demonstrations, tastings and question and answer sessions with renowned chefs

 

Lu Ban English graduation certificate and membership of the Craft Guild of Chefs

Only issued to students who complete the course, this is a certificate issued by Lu Ban and its partners to confirm you spent time in the UK studying and have ben accepted by the Craft Guild of chefs (£50 to join)

 

26 WEEKS CHINESE CULINARY ARTS PROGRAM IN LIVERPOOL ENGLAND

26 weeks Chinese Culinary Arts Program is designed for those who are looking to develop their career, skills and opportunities in the Hospitality and Catering industry. The course runs for 26 weeks with intake throughout the year.

 

Week One

·         Meet students joining the cookery program

·         10 days work experience in pairs in international branded venues

Week Twenty

·         Scotland visit, Whisky distillery and landmarks

Week Twenty-One

·         Day trip to North Wales

·         Practical skill development in the restaurant

Week Twenty-Two

·         Michelin star restaurant visit with dinner and wines

·         Finalise theory knowledge

Weeks Twenty-Three to Twenty-Five

·         Final assessments

·         Completion of paperwork for qualification

Week Twenty-Six

·         Presentation of course to hotel and restaurant managers, chef, parents, friends  and invited VIPs

The  IACCA  program is designed to give you the English language and related vocational and academic skills to reach your full potential within the workplace or to progress onto further study with a UK university.

The program comprises of the following modules of specialised Chinese culinary arts, these modules include theory and practical knowledge and skill tests

  • The origin and development of Chinese food culture
  • How to prepare and cook Chinese cold dishes
  • How to prepare and cook Chinese hot dishes
  • History and skills for making Chinese pastries
  • History and skills required for Chinese dough modelling
  • English language skills, personal learning and critical thinking skills.

The program also includes work placements, many educational visits, guest speakers, chef demonstrations, dining experiences and food and beverage tastings. The work experience element of the program will help prepare you for working life in the UK or overseas and give you a sound introduction to Western culinary arts.

Your work experience will include opportunities to work with Hilton Hotels, IHG, Accor, Pullman and within Liverpool Football club and Everton football club.

Prior to work experience you will be expected to complete UK regulated qualifications in food safety.

On graduation you may be selected onto the Level 4 qualification and continue your studies. Alternatively, with the right credential you may decide to gain employment, we have many links with employers in Liverpool, the North West of England and the rest of the country.

Those wishing to apply to work in the UK will continue to be supported by IACCA for an agreed period of time, we can assist with continued accommodation, English classes and advice and support on life in the UK.

Those who want to continue studying can progress to level 4 and then level 5 diploma in Chinese Culinary Arts and Management.

Learners with a Level 5 qualification will have the opportunity to progress to the final year of UK bachelor’s degree at a partner university in the related subject areas such as hospitality and tourism management. You may also choose to continue your studies by progressing to appropriate Level 7 qualifications.

Level 7 qualifications represent 120 credits of a 180-credit master’s degree. On completion of this qualification students are able to progress on to the final 60 credits of study for a UK Master’s degree e.g. the dissertation for award of an MBA. In this case, there is no need to complete a bachelor’s degree in order to achieve the master’s degree.

This is a program aimed at those wishing to study in the UK, achieve regulated qualifications and experience Western cuisine  it is a residential course that will require 100% commitment to all aspects of the course, you will require the following to be considered

  • A good high school or vocational and technical school leaving certificate
  • IELTS 5.0 or higher in English or equivalent.
  • A willingness to learn overseas
  • An interest in food and drink
  • A desire to work in the hospitality sector, this includes as a chef, server, or manager
  • Aspirations to study in UK university
  • Note Minimum age may apply for the course.
